
I love making this cake! It’s so easy and fast and it always turns out great. Just a little comment: the directions call for dusting it with icing sugar – but this is the point you can get really creative! You can top it with whipping cream, or it tastes great with sliced pears (make sure you toss them with a bit of lemon juice before you put them on the cake so they don’t turn brown!) Great idea as well is to mix some crushed pineapple into whipping cream and serve it on top of each slice – the possibilities are unlimited since this is such a great recipe!
3/4 cups of butter
1-1/2 cups of sugar
3 egg yolks, beaten
1 teaspoon vanilla
1 cup of milk
1/2 teaspoon of salt
2 teaspoons of baking powder
1/2 teaspoon allspice
1/4 teaspoon cloves
1 teaspoon cinnamon
2-1/4 cups of flour
2/3 cups of chopped nuts
1 cup of raisins
3 egg whites
Cream butter, add sugar gradually, beating until fluffy. Add beaten egg yolks, vanilla and milk, beat until smooth. Stir salt, baking powder, spices and flour together, fold in nuts and raisins. Combine flour mixture with batter. Beat egg whites until stiff but not dry, fold gently into the batter. Bake in greased 10" tube pan in a moderate oven (375F) for 50 – 60 minutes. Dust with icing sugar ot frost desired.
