Who wouldn’t want to try Creamy Peach Pudding or savour delicious Triple Chocolate Temptation? I am sure you could be convinced to taste Black and White Chocolate Mousse and definitely enjoy Mandarin Cream Parfait!

Peachy Cream Pudding:
Ingredients:
- 1 – 3 oz. box of pineapple gelatin mix
- 1/2 cup of peach nectar
- 2-6 oz. containers of non fat peach yogurt
- 1/4 cup of fat free whipped topping
Directions:
- In a large bowl combine pineapple gelatin mix and 1 cup of boiling water – let sit for about 2 minutes. until gelatin is completely dissolved
- Stir in peach nectar
- Whisk in peach yogurt until blended
- Gently fold in whipped topping
- Chill for 4 hours or until set
- Just before serving, whisk gelatin mixture until smooth
- Divide evenly into 6 bowls and garnish with fresh mint and thinly sliced peaches
Triple Chocolate Temptation:
Ingredients:
- 1 1.3 oz. box of fat-free, sugar-free cook-and-serve chocolate pudding mix
- 2 cups of chocolate skim milk
- 2 oz. of chopped bittersweet or semisweet chocolate
- 1/4 cup of fat-free whipped topping
Directions:
- In a medium saucepan over medium heat, bring chocolate pudding mix and chocolate skim milk to a boil, stirring constantly
- Remove from heat
- Add chopped chocolate; stir until chocolate is melted
- Divide pudding mixture evenly into 4 serving bowls and cover with plastic wrap
- Chill for 1 hour or until set
- Top each bowl with whipped topping and garnish with chocolate shavings if desired
Black and White Chocolate Mousse:
Ingredients:
- 1 – 1 oz. box of fat-free, sugar-free white chocolate instant pudding mix
- 2 cups of chocolate skim milk
- 4 oz. of low-fat cream cheese at room temperature
- 2 tablespoons each of confectioner’s sugar and fat free milk
- 1/4 teaspoon of almond extract
- 1 chocolate wafer cookie, crushed
Directions:
- Prepare pudding mix according to package directions, substituting chocolate milk for regular milk
- In a separate bowl, combine the next 4 ingredients and stir in cookie crumbs
- Divide pudding mixture evenly between 4 serving glasses, tilting glasses to create slant
- Divide cream cheese mixture evenly among the glasses
- Cover and chill for 4 hours or until set
Mandarin Cream Parfait:
Ingredients:
- 1 orange, zested and juiced
- 1 cup of fat-free Ricotta cheese (or 1 cup of prepared sugar-free, fat-free vanilla pudding
- 2 tablespoons of agave nectar or honey
- 1-11 oz. can of mandarin oranges, drained and divided
- 1 cup of fat-free whipped topping
Directions:
- In food processor or blender, puree 1/3 cup of orange juice, 14 teaspoon of orange zest, cheese and agave nectar for about 30 seconds or until smooth
- Reserve 4 mandarin oranges segments, divide remaining among 4 serving bowls
- Divide ricotta cheese mixture evenly into the serving bowls
- Top with whipped topping and reserved oranges
- Garnish with fresh mint and chocolate cookie bar if desired
