These great mixed berry muffins combine the flavours of blueberries, raspberries and strawberries into one delicious freat! Whether you serve them fresh from the oven for breakfast, or with a bowl of cottage for lunch, or with fresh coffee or tea for snack in the afternoon, they are always a hit. I have tried to add raisins as well to this recipe and it sweetened the muffins nicely – go ahead and try, you will not be disappointed!
Homemade Berry Muffins:
1/2 cup of fresh or frozen blueberries
1/2 cup of fresh or frozen raspberries
1/2 cup of fresh of frozen strawberries (cut these into smalls pieces about 1/2 inch
1 cup of flour
1 cup of sugar, divided
1 package (8 oz.) of cream cheese, softened
2 eggs
1 teaspoon of vanilla extract
1 teaspoon of baking soda
1/2 teaspoon of salt
1/3 teaspoon of ground nutmeg
Topping:
1/4 cup of finely chopped walnuts
1/4 cup of flaked coconut
2 tablespoon of brown sugar
1/4 teaspoon of ground cinnamon
Directions:
In a large bowl, combine berries with 1/4 cup of sugar and set aside.
In a large bowl, beat cream cheese and remaining sugar until smooth. Add eggs, one at a time, beating well after each addition. beat in vanilla. Combine flour, baking soda, salt and nutmeg, add to creamed mixture. Gently fold in berry mixture.
Fill greased or paper cup lined muffin pan – fill about two-thirds full. Combine topping ingredients and sprinkle over batter in pan.
Bake at 400F for 18 – 20 minutes or until toothpick inserted into the centre of muffin comes out clean. Cool for 5 minutes before remobing to a wire rack.

I did make your homemade berry muffins. I only had blueberries, and they were wonderful! Fortunately, I made a double batch. Great recipe!
