It’s that time of the year again – those wonderful, sweet smelling and juicy berries are everywhere! You can make the ever popular shortcake or you can check out and try my Top 5 Strawberry recipes. Go for something just a little bit different and you will not be disappointed!
Here are a few simple tips for you on choosing and storing strawberries:
Choosing your berries:
Look for sweet smelling berries that are completely coloured, with no white or green spots. Some are bright red, some more garnet. All berries, whether large or small are equally sweet and juicy. Discard any that are bruised or spoiled.
Refrigerate, unwashed, uncovered and with hulls intact, preferably in a single layer for up to 3 days.
Just before serving, rinse berries with hulls still on (do not soak because berries will absorb water and lose flavour) Pat dry with towel, then hull.
Without sugar: Wash dry and hull berries. Freeze in single layer on baking sheet. Pack in freezer bags, removing air. Label with date.
With sugar: Wash, dry and hull berries. Combine 4 cups of whole berries with ½ cup of sugar. Pack in containers, leaving ½ inch headspace or in freezer bags, removing air. Label with date.
