I love cranberries! Not only are they good for you, they are a great addition to all kins of recipes. These scones were delicious – combination of cranberries and orange flavours is really something very special. I am going to make these for Christmas morning breakfast/brunch for sure Enjoy!
Cranberry Orange Scones:
Ingredients:
- 1-1/2 cups of flour
- 3 tablespoons of sugar
- 2-1/2 teaspoons of baking powder
- ½ teaspoon of baking soda
- ¼ teaspoon of salt
- 1 teaspoons finely grated orange zest
- 5 tablespoons of cold, unsalted butter, cut into small pieces
- ½ cup of dried cranberries
- 2/3 cup of buttermilk (add 1-2 tablespoons more if necessary)
Directions:
- Preheat oven to 400F
- Line a baking sheet with parchment or waxed paper
- In a large bowl, stir together flour, sugar, baking powder, baking soda, salt and orange zest
- With a pastry blender or two knives, cut butter into flour mixture until it looks like coarse oatmeal
- Stir in dried cranberries
- Make a well in the centre of flour mixture
- Add butter milk and stir until just combined – do not overmix. Add a little more butter milk if dough is too dry to work with
- Transfer dough to a lightly floured surface
- Shape into a 8-inch round
- Transfer onto baking sheet
- Cut circle into wedges and space them about ½ inch apart (to prevent sticking, dust knife with flour)
- Bake until golden, about 18-20 minutes
