If you like the smell of apples and cinnamon – you will love this cake! Again – its one of those recipes that has been tested over and over – and it turns out each and very time! The instructions call for one apple – I have use as many as 4 – just making sure that they are the type that are not too juicy – that can make the cake soggy on top and the batter will have a hard time finishing baking properly. Served warm, this cake is a sure hit – served few days after being baked, it’s just as good!
Apple Coffee Cake:
1-1/2 cups of flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup of butter
1 cup of sugar
2 eggs
1 cup of sour cream
1/2 teaspoon baking soda
Topping
1 apple
1 tablespoon lemon juice
1/3 cup of brown sugar
3/4 teaspoon cinnamon
Prepare topping first. Wash and core apple, but do not peel it. Slice apple very thin and sprinkle with lemon juice; cover and set aside. Combine brown sugar and cinnamon. Stir flour, baking powder and salt together. Cream butter, add sugar gradually add sugar, beating well. beat in the eggs. Combine baking soda with sour cream and add to batter alternatively with dry ingredients, blending well. Pour into greased and floured 9″ square cake pan. Sprinkle with 1/2 the brown sugar-cinnamon mixture. Place apple slices on top and cover with remaining topping. Bake in a moderate oven (325F) for 50 – 60 minutes. Serve warm.
