It’s summer time and grilling is going on full speed. I started getting into making some other variations of burgers – and here are my favorite ones. I am sharing 4 recipes with you – and – yes – one of them is “almost” traditional beef burger. Simple recipe but Oh sooo good! Try these and let me know how you liked them!
Best Beef Burger
- Heat your grill on high
- In a medium bowl, use fork to gently combine 2 lbs. of ground chuck, 1 tablespoon of Dijon mustard and 1 tablespoon of Worcestershire sauce
- Season with salt and fresh ground pepper
- Gently form mixture into four one-inch patties
- Place on hottest part of grill, sear until browned 1-2 minutes per side
- Move patties to cooler part of the grill and continue grilling until desired doness – 4-8 minutes per side
Favorite Turkey Burger
- Heat grill to high
- In a medium bowl, use a fork to combine 1-1/2 – 2 lb.s of ground turkey with ½ cup of finely grated Gruyere cheese, 4 thinly sliced scallions, ¼ cup of dried breadcrumbs, ¼ cup of Dijon mustard and 1 minced garlic clove.
- Season with salt and freshly ground pepper
- Gently form mixture into four 1 inch thick patties
- Lightly oil grill
- Place patties on hottest part of grill until browned – 1-2 minutes poer side
- Move patties to cooler part of grill, continue grilling until cooked through – 5-10 minutes per side
Mini Greek Lamb Burgers
Ingredients for tzatziki:
- ½ cup of English cucumber, peeled, seeded and grated (3/4 cup)
- ½ cup of plain yogurt
- 2 teaspoons of fresh lemon juice
- 2 teaspoons of fresh mint – chopped
- 1 garlic clove – minced
- Salt and pepper
Ingredients for burgers:
- 1-1/2 lbs. of fresh ground lamb
- ½ small onion, minced (1/4 cup)
- ¼ cup of fresh parsley – chopped
- 2 teaspoons of fresh chopped oregano or 1 teaspoon of dried oregano
- Salt and pepper
- 4 pita breads (6 inch)
- 2 medium beefsteak tomatoes, sliced for serving
Directions:
- Heat grill to high
- Make tzatziki in a medium bowl by combining cucumber, yogurt, lemon juice, salt and pepper with mint and garlic and season with salt and pepper
- Cover and refrigerate until ready to use
Make burgers:
- In a medium bowl, gently combine lamb, onion, parsley and oregano\Season with salt and pepper
- Gently form mixture into 16 small patties – about ¾ inch think
- Grill until medium rare – about 2-3 minutes per side
- To serve, warm pitas on the grill, halve and fill with burgers, tzatziki and tomato slices
Chickpea Burgers
- Heat grill to high
- In a food processor, combine 1 can (15 oz) of drained chick peas, 4 trimmed scallions, 2 slices of white sandwich bread, 1.3 cup of unsalted peanuts or almonds, ½ teaspoon of ground cumin and tablespoon of fresh ground ginger.
- Season with salt and pepper
- Pulse until roughly chopped
- Remove half of the mixture and add 1 egg to the food processor
- Process until smooth, add to reserved mixture in a bowl and mix well
- Form the mixture into four ¾ inch thick patties
- Brush each side generously with olive oil and grill until charred – 3-5 minutes per side
- Serve with lettuce and Dijon mustard on a whole-wheat bread of whole wheat English muffins.
