If you love cheesecakes, you just gotta try this one! It’s really easy to make and totally delicious. I believe you will find it light and refreshing and depending on what and how you choose to garnish it, it will be a great treat for you family or friends.

  • 1-1/4 cups of graham crumbs
  • ¼ cup of melted butter
  • 3 packages of cream cheese
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla
  • 1 tablespoon of each – lemon, lime and orange juice
  • 1 tablespoon of each – lemon, lime and orange peel
  • 3 eggs

1.      Combine crumbs and butter, press into a bottom of 9 inch spring form pan

2.      Beat cream cheese, sugar and vanilla until well blended

3.      Blend in juices and peels

4.      Add eggs, one at a time, mix just until blended

5.      Pour over crust

6.      Bake at 350F for 45-50 minutes or until the centre is almost set

7.      Cool completely, then refrigerate 4 hours or overnight

8.      If you want to, garnish with fresh fruit or lemon, lime and orange slices
