Perfect for a quick dinner – and a definite treat!
Ingredients:
- 1 tablespoon of olive oil
- 3 medium onions, thinly sliced (about 3-1/2 cups)
- 1/2 of low-sodium beef broth
- 1 thyme spring
- 1/4 cup of dry sherry (optional)
- 4 teaspoons of Dijon mustard
- 8 slices of rye bread
- 4 slices of gruyere or swiss cheese
Directions:
- Heat a large non-stick pan over high. Add 1 teaspoon of oil, then onions, broth and thyme.
- Cook, stirring often, until liquid is reduced – about 15 minutes
- Add sherry and continue cooking until absorbed – about 5 more minutes
- Remove thyme
- Spread Dijon mustard on 4 slices of bread
- Top each slice with about 1/3 cup of onion mixture and 1 cheese slices
- Top with remaining bread
- Wipe pan clean and heat over medium heat
- Cook 2 sandwiches at a time – about 2 minutes per side
- Repeat with remaining oil and sandwiches
- Keep grilled sandwiches warm on a foil lined baking sheet in a 200F oven
