This recipe may sound like it is loaded with calories and stuff generally bad for you – but it actually has only 280 calories and 10gms of fat per serving. And it is delicious!
Ingredients:
- 3/4 cup of lightly packed brown sugar
- 1/2 cup of salt free margarine
- 1/4 cup of chopped walnuts
- 4 ripe firm bananas
- 1/2 cup of plain yogurt
- 3 eggs (use Omega 3 eggs if you can)
- 2 teaspoons of each vanilla and finely grated orange rind
- 3/4 cups of granulated sugar
- 3/4 cups of flour
- 1/2 cup of whole wheat flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
Directions:
- Preaheat oven to 350F
- grease 9-inch springform pan, wrap the bottom and outer edge with foil
- Heat the sugar with 3 tablespoons of margarine in a saucepan over medium heat
- Cook, stirring until sugar is melted
- Pour into bottom of prepared pan
- Sprinkle with walnuts
- Slice bananas into 1/4 inch thick slices
- Overlap slices in a circular pattern in the prepared pan and set aside
- Stir the remaining margarine, yogurtm eggs vanilla nad orange rind until blended
- Blend together sugar, flour, whole wheat flour, baking powder and salt in a separate bowl
- Stir into yogurt mixture just until combined
- Drop the batter by spoonfulls over the banana layer and smooth the top
- Bake for 55-60 minutes or until tested inserted into the centre comes out clean
- Let cool for at least 5 minutes in the pan on a rack
- Then unmould onto a cake plate, banana side up
