Here is another old-time favourite! The great thing about meatloaf is that the leftovers are just as good (sometimes even better) the next day and that meatloaf is actually a great thing to have in your freezer for future quick dinners!
Homemade Meatloaf:
1 lb. of lean ground beef
1 lb. of ground pork
1 medium onion – finely chopped
1 cup of mushrooms – finely chopped
I cup of milk
2 eggs
1 garlic clove, mashed
1/2 teaspoon of oregano
1/2 teaspoon of basil
Salt and pepper
3/4 – 1 cup of steak sauce, barbecue sauce or ketchup (your taste preference)
Bread crumbs
4-5 strips of bacon
In a large bowl, combine beef and pork until uniformly mixed together (best is to use your hands to do this)
In a small bowl, combine milk, eggs, spices, onions and mushrooms until blended. P Pour over mixed meats and work in, add your choice of sauce and work it in. Start adding bread crumbs, mixing them in and adding enough to get the meat mixture so it doesn’t stick to your hands. Take out of the bowl and form the meatloaf. At this point you can choose to make either two smaller loaves or one large one. Put into loaf pan(s) and place bacon strips on the top to cover it.
Bake in moderate oven – 350F – until the loaf forms a nice crust – that should take 1- 1-1/2 hours. The loaf will shrink while baking and depending on the amount of fat in the meat, you may have to remove some of it during baking.
Note: the bacon strips are optional – you can just leave your loaf plain. I like to add them, because they offer a little extra flavour.
Seriously – You have to try this meatloaf. I speak from experience. I don’t even like meatloaf but Hanna’s is AWESOME!!
