This cake is perfect for a cool, rainy day – and it is very easy to make! Best is to use fresh ginger, it just takes a short time to peel it and chop it – if you have a food processor or the Magic Bullet (that what I use a lot) it will take you no time at all and the results are awesome!
Serve this cake with fresh whipping cream or French Vanilla ice cream – totally Yummy!
Homemade Ginger Cake Recipe:
Ingredients:
- 8 oz. (2-6-inch pieces) of fresh ginger, peeled and roughly chopped
- 3 cups of all-purpose flour
- 2 teaspoons of baking soda
- 1 teaspoon of salt
- 1-1/2 cups of granulated sugar
- 2/3 cups of molasses
- 2 large eggs
- 1 cup of unsalted butter (if you use salted butter, eliminate the salt from the recipe)
- Confectioner’s sugar for dusting
- Nonstick cooking spray
Instructions:
- Preheat oven to 350F
- In a food processor, pulse ginger until finely chopped (or chop by hand) you should have 1 cup
- In a large bowl, mix together flour, baking soda and salt
- In another bowl, whisk together sugar, molasses and eggs until smooth
- Whisk in butter and 1/3 cup of hot water
- Stir in flour mixture just until incorporated and then stir in ginger
- Generously coat 3-quart bundt pan with cooking spray
- Pour better into the pan and bake until a toothpick inserted in the cake comes out clean – about 45 minutes
- Transfer pan onto a wire rack, let cool completely – about 1 hour
- Run a knife around the edge of cake – then invert
- Dust with confectioners sugar before slicing
