Homemade Ginger Cake Recipe

This cake is perfect for a cool, rainy day – and it is very easy to make! Best is to use fresh ginger, it just takes a short time to peel it and chop it – if you have a food processor or the Magic Bullet (that what I use a lot) it will take you no time at all and the results are awesome!

Serve this cake with fresh whipping cream or French Vanilla ice cream – totally Yummy!

Homemade Ginger Cake Recipe:

Ingredients:

  • 8 oz. (2-6-inch pieces) of fresh ginger, peeled and roughly chopped
  • 3 cups of all-purpose flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1-1/2 cups of granulated sugar
  • 2/3 cups of molasses
  • 2 large eggs
  • 1 cup of unsalted butter (if you use salted butter, eliminate the salt from the recipe)
  • Confectioner’s sugar for dusting
  • Nonstick cooking spray

Instructions:

  1. Preheat oven to 350F
  2. In a food processor, pulse ginger until finely chopped (or chop by hand) you should have 1 cup
  3. In a large bowl, mix together flour, baking soda and salt
  4. In another bowl, whisk together sugar, molasses and eggs until smooth
  5. Whisk in butter and 1/3 cup of hot water
  6. Stir in flour mixture just until incorporated and then stir in ginger
  7. Generously coat 3-quart bundt pan with cooking spray
  8. Pour better into the pan and bake until a toothpick inserted in the cake comes out clean – about 45 minutes
  9. Transfer pan onto a wire rack, let cool completely – about 1 hour
  10. Run a knife around the edge of cake – then invert
  11. Dust with confectioners sugar before slicing
